How we evaluated it
Why we chose it What put it on our list
- The USDA Organic Integrity Database lists Ancient Grains, LLC dba Grand Teton Ancient Grains (NOP ID 2170041852) as certified by the Idaho State Department of Agriculture since 2013, with Einkorn Flour in its handling scope.
- It is the lowest price per pound of the einkorn flours we checked: 5 lb is $19.87 ($3.97 a pound), 10 lb is $37.08 ($3.71) and 40 lb is $132.95 ($3.32) on 2026-10-22.
- The maker says each order is milled on its stone mill, a few times a week, and shipped fresh, and its FAQ describes the farm and mill in Teton, Idaho. The flour comes in paper bags.
- The maker says it tests its grains for glyphosate, and its FAQ says the farm uses no glyphosate, herbicides or pesticides.
Trade-offs What to weigh before you buy
- The page contradicts itself on whether this is whole grain. Its headline says “Whole Grain, Freshly Stone Milled” and “100% whole grain”, but its milling-process paragraph says the flour is “sifted to remove most of the bran”, a light all-purpose flour. The maker’s FAQ says sifting is what separates all-purpose from whole grain flour. We do not know which is true for the flour in the bag.
- The glyphosate claim is the maker’s own. It names no lab and posts no results, and Grand Teton is not on The Detox Project’s residue-free list.
- There is no mill date on the page, although the all-purpose flour page says its bags print one. The page does not say where the grain was grown, and the FAQ says the farm also contracts growers across the northwest of North America.
- Einkorn is wheat. It contains gluten and is not safe with celiac disease. The FAQ only advises talking to a health care professional first, the page’s title tag says “Easy to Digest”, and its text calls einkorn gluten a “good gluten”. We do not repeat those claims.
What to know Details worth knowing first
Grand Teton Ancient Grains is a family farm and mill in Teton, Idaho, and this is its whole wheat einkorn flour, the cheapest per pound of the einkorn flours we checked. The USDA Organic Integrity Database confirms its organic certification, and the maker says it mills each order fresh.
The open question is on the product page, which says two opposite things. Its headline and description call the flour whole grain, but the milling-process paragraph says it is sifted to remove most of the bran. The maker’s own FAQ says sifting is what makes a flour all-purpose rather than whole grain. Until the maker says which is true, we cannot state that this is a whole-grain flour, and we are asking.
Einkorn is wheat and contains gluten, so it is not safe with celiac disease (see celiac disease). Our farro article compares einkorn with other ancient wheats.
