How we evaluated it
Why we chose it What put it on our list
- The material is stated as a number: de Buyer lists the body as “Iron 99%, Carbon 1%”, with a cast stainless steel handle and “no artificial coatings”.
- It is made in France, per the product page, and the 11 in is a 3 mm body.
- The only finish is a beeswax coat that protects the pan in transit. De Buyer tells you to scrub it off with hot water before the first use.
- Warranty: de Buyer’s carbon steel line carries a lifetime warranty against manufacturing defects, for as long as the original purchaser owns the pan.
- It is compatible with gas, electric, ceramic, induction and grill, and is oven safe.
Trade-offs What to weigh before you buy
- You build the non-stick surface yourself. De Buyer says to heat a thin layer of oil on it until it smokes lightly, and to avoid soap and the dishwasher afterward.
- The warranty does not cover rust or corrosion, heat damage or seasoning problems, and it applies only to purchases from de Buyer or an authorized seller in the US.
- No maximum oven temperature is on the page we read.
- At 4.6 lb, the 11 in is not light. Carbon steel reacts with acidic food, so keep long tomato simmers for another pan.
What to know Details worth knowing first
Carbon steel is the pan most restaurant kitchens reach for: iron with a little carbon, thinner and lighter than cast iron and quicker to react to the burner. Our cookware guide covers how it compares with cast iron and stainless steel, and the cast iron article explains what seasoning is and who should watch their iron intake.
De Buyer’s Mineral B Pro is the French classic, and its page is plain about what it is: iron, carbon, a stainless handle and a coat of beeswax to stop rust in the box. Nothing else touches the food. The cost is time. You season it, you keep it dry, and you skip the dishwasher.
We read de Buyer’s own pages only. No outside lab or certifier backs the claims, so the rating is 4, not 5.
Quality & testing How it measures up against our checklist
| What we checked | What we found |
|---|---|
| No PTFE or PFAS coating Maker’s claim | Bare carbon steel with a beeswax shipping coat. De Buyer states “no artificial coatings”. (De Buyer also sells non-stick pans, which are a different line.) |
| Plain, named materials Maker’s claim | Body: iron 99%, carbon 1%. Handle: cast stainless steel, riveted. Finish: beeswax. Made in France. |
| Built to last Maker’s claim | Lifetime warranty on the carbon steel line, against manufacturing defects, original purchaser only. Rust, corrosion, heat damage and improper seasoning are not covered. |
| Fits how you cook Maker’s claim | Induction, gas, electric, ceramic, grill and oven. No oven temperature limit is stated. The 11 in is 4.6 lb. |
What the labels mean
- Verified We opened an independent record that confirms it: a certifier’s listing, a regulator’s list or a lab report. It is linked under Sources.
- Maker’s claim The maker says so on its own page or label. We read it but found no independent record.
- Not verified We looked and could not confirm it, or the maker does not say. Treat it as unknown.
