Why we chose it What put it on our list 5 points
    • The materials are stated plainly: carbon steel, “Seasoning Ingredients: Corn Oil”, two rounds of seasoning baked on, and a glass lid with a silicone rim and stainless steel handle.
    • There is no coating on the pan: the surface is carbon steel with baked-on oil.
    • Limits are written down: oven safe to 500°F, induction compatible, hand wash only. The lid is oven safe to 450°F and dishwasher safe.
    • Origin is stated on the page as country of production CN, and Misen offers a 60-day test drive and free returns.
    • Misen’s warranty is a limited lifetime warranty against defects in materials, construction or workmanship.
Trade-offs What to weigh before you buy 4 points
    • Misen’s warranty applies only to the original purchaser and only if you bought from Misen.com or Misen’s own Amazon account. It excludes stripped seasoning, rust spots, flaking and uneven seasoning.
    • It needs care: dry at once, apply a thin layer of oil after washing, and avoid acidic foods until the pan is fully seasoned.
    • It is made in China, and its factory is not named. A French-made carbon steel pan costs about the same.
    • Misen’s page gives no steel composition, such as an iron and carbon percentage.
What to know Details worth knowing first

Misen sells several kinds of pan, and not all of them pass our cookware test. This one does: it is carbon steel with oil baked on, which is the same idea as cast iron in a thinner, lighter form. Our cookware guide covers where carbon steel fits against cast iron, stainless steel and enameled pans.

The page is clear on what you get: material, seasoning, heat limits, a lid, and a warranty with its exclusions listed on a separate page. It is also clear that you must look after it. Wash by hand, dry it, oil it, and go easy on tomatoes until the seasoning has built up. The article on cast iron and seasoning explains the iron it adds to food.

Everything above is Misen’s own statement, and the pan is made in China. We found no outside test report.
