Rainbow Chicken Meal-Prep Boxes

Instructions
- Preheat oven to 425°F (220°C) and line two sheet pans.
- Toss the sweet potato with 1 tbsp oil and half the spices; roast on one pan for 10 minutes.
- Meanwhile, toss the chicken, broccoli, peppers, and onion with the remaining oil and spices.
- Add them to the pans and roast everything together for another 18–20 minutes, until the chicken reaches 165°F (74°C).
- Slice the chicken. Divide the rice, chicken, and vegetables among four containers.
- Cool completely before sealing; keeps 4 days in the fridge.
Tips
- Cut the sweet potato smaller than the other vegetables so everything finishes at the same time.
- Add a lemon wedge or hot sauce packet to each box to keep lunches interesting.
