  1. Preheat oven to 425°F (220°C) and line two sheet pans.
  2. Toss the sweet potato with 1 tbsp oil and half the spices; roast on one pan for 10 minutes.
  3. Meanwhile, toss the chicken, broccoli, peppers, and onion with the remaining oil and spices.
  4. Add them to the pans and roast everything together for another 18–20 minutes, until the chicken reaches 165°F (74°C).
  5. Slice the chicken. Divide the rice, chicken, and vegetables among four containers.
  6. Cool completely before sealing; keeps 4 days in the fridge.

Tips

  • Cut the sweet potato smaller than the other vegetables so everything finishes at the same time.
  • Add a lemon wedge or hot sauce packet to each box to keep lunches interesting.
