Misen Carbon Nonstick Frying Pan with Glass Lid, 10 inch
Reader ratings
An uncoated pan of nitrided carbon steel over an aluminum core, sold as a non-stick alternative. Misen says it has no PTFE or PFAS. The surface treatment is the maker’s claim only, and the pan is made in China.
Best for People who want a low-fuss, lighter pan than cast iron, and who accept that its “non-stick” surface rests on the maker’s word.

How we evaluated it
Why we chose it What put it on our list
- Misen describes a coating-free surface: “3-ply construction (nitrided carbon steel + aluminum core)”, where nitriding is heat treatment in a nitrogen-rich oven that hardens the steel, not a coating.
- Misen’s FAQ states “Carbon Nonstick™ is free of PFAS, PTFE, and PFOA”, and says the pan is wiped with a thin layer of neutral corn oil after nitriding.
- Limits are written down: oven safe up to 1,100°F, induction compatible, safe with metal utensils, hand wash only. The lid is oven safe to 450°F.
- Misen’s warranty is a limited lifetime warranty against defects, plus a 60-day test drive.
Trade-offs What to weigh before you buy
- The central claim, that nitriding makes a safe, durable non-stick surface, comes from Misen alone. We found no independent test of what the surface releases or how it wears.
- The pan has an aluminum core. Misen does not say whether the core is exposed at the rim.
- Misen’s warranty excludes seasoning loss, rust spots, flaking and sticking, and it covers only the original purchaser who bought from Misen or Misen’s own Amazon account.
- Made in China. Hand wash only. Misen advises preheating for 1 to 2 minutes and cooking with a little oil (½ to 1 tablespoon), so it is not a no-fat pan.
What to know Details worth knowing first
Misen’s Carbon Nonstick pan is not a Teflon pan and not a ceramic-coated pan. It is carbon steel that has been heat treated, a process called nitriding, so the surface is meant to be part of the steel rather than a layer sitting on it. Nitriding is an established way to harden steel. Our cookware guide explains why a coating that wears is the problem with most non-stick pans.
What we cannot do is confirm it. We found no outside lab or certifier results for this surface, so everything here is Misen’s account, and seasoned iron has a much longer record in home kitchens. That is why it is rated 3.
If you want the same material with a longer track record, Misen’s pre-seasoned carbon steel pan is plain steel and oil. Misen’s warranty page also still lists a “Traditional Nonstick Cookware” line, with a two-year warranty and a 400°F limit. We did not find it in the current catalog, and it does not name its coating, so it would not meet our cookware standard.
Quality & testing How it measures up against our checklist
| What we checked | What we found |
|---|---|
| No PTFE or PFAS coating Maker’s claim | Misen states the pan is free of PFAS, PTFE and PFOA and that the surface is nitrided steel, not a coating. No outside test. |
| Plain, named materials Maker’s claim | 3-ply nitrided carbon steel over an aluminum core; corn oil wipe; made in China (PRC). What the nitriding process releases is not tested by anyone we found. |
| Built to last Maker’s claim | Limited lifetime warranty against defects, original purchaser only. Seasoning loss, rust spots, flaking and sticking are not covered. |
| Fits how you cook Maker’s claim | Oven safe to 1,100°F, induction compatible, metal utensil safe, hand wash only. 2.5 lb for the 10 in. |
| Independent test of the nitrided surface Not verified | Not found. Misen calls nitriding “completely safe and nontoxic” and “widely used” elsewhere in industry. That is Misen’s statement. |
What the labels mean
- Verified We opened an independent record that confirms it: a certifier’s listing, a regulator’s list or a lab report. It is linked under Sources.
- Maker’s claim The maker says so on its own page or label. We read it but found no independent record.
- Not verified We looked and could not confirm it, or the maker does not say. Treat it as unknown.

Alternatives Other options to compare
- Misen Pre-Seasoned Carbon Steel Pan Plain carbon steel with baked-on corn oil, about $139 for 10 in with a lid. A longer track record than nitriding.
- A stainless steel pan Nothing to season and dishwasher safe in many models, but food sticks without preheating and fat.
