- Pat the shrimp dry and season with salt.
- Heat the olive oil and 1 tbsp butter in a large skillet over medium-high. Cook the shrimp 2 minutes per side until pink; remove.
- Lower the heat, add the remaining butter, garlic, and red pepper flakes; cook 1 minute.
- Add the zucchini noodles and toss 2 minutes just until barely tender — do not overcook or they turn watery.
- Return the shrimp, squeeze in the lemon, and toss with parsley.
- Serve immediately.

- Zucchini noodles release water fast — keep the heat high and the cooking brief.
- No spiralizer? Many stores sell pre-spiralized zucchini, or use a julienne peeler.
