Why we chose it What put it on our list 4 points
    • Kornkraft names the stone and its bond: “Naxosbasalt in Magnesit-Salz-Bindung” (Naxos basalt in magnesite-salt binding). The US seller lists the stones as 85 mm across. Naming the binder is what the category asks for.
    • The output is stated: about 50 g a minute of fine flour and 100 g a minute coarse, from a 350 g hopper (Kornkraft).
    • The housing is solid beech from German forestry, finished with Auro beeswax balm. The stone axle runs on ball bearings and felt feet protect the counter (Kornkraft).
    • A 10-year guarantee on all goods, with the claim process stated (Kornkraft’s warranty statement). Kornkraft sells spare parts.
Trade-offs What to weigh before you buy 4 points
    • The warranty statement covers “the territory of the Federal Republic of Germany and the European Union”. US buyers go through Loewen META, whose own policy page gives 2 years.
    • Kornkraft’s page says a bowl is supplied but not what it is made of. Loewen META sells the mill with or without a glass bowl, so buy the glass one.
    • We found no wear or grit test for any of the stones we reviewed, magnesite-bound or ceramic-bound, so the binder is a question we can name but not answer.
    • It is a hand mill. At 50 g a minute, 1 kg of fine flour takes about 20 minutes of cranking.
What to know Details worth knowing first

The Mia Mola answers a question most mills leave open: what are the stones bound with? Kornkraft says Naxos basalt in a magnesite-and-salt binding. The electric mills we reviewed describe corundum-ceramic stones and say no more about the bond. We found no wear or grit test for either kind, so we cannot tell you which sheds less stone into flour.

The rest of the build is plain and mostly named: solid beech, beeswax balm, ball bearings, and a bowl that should be glass. That is the point of a hand mill for a reader worried about plastic. For the wider case for keeping plastic away from food, see reducing your microplastic exposure.

Be realistic about effort and warranty. A kilogram of fine flour is about 20 minutes of cranking, and the 10-year warranty is written for Germany and the EU. We are asking Kornkraft about the bowl, the bearing lubricant and US coverage.

Whole berries such as Grand Teton’s organic einkorn berries are what a mill like this turns into flour. For what whole-grain flour does in baking, see spelt, fiber and blood sugar and sourdough.
