Why we chose it What put it on our list 4 points
    • hawos’s manual says the mill is solid beech wood with “grinding stones made of corundum/ceramic”, and its page says a glass collecting vessel comes in the box.
    • It states its output: about 25 g a minute fine and 50 g coarse at about 100 turns a minute, from a hopper of about 200 g (hawos spec table).
    • The finish is linseed-oil varnish, and the manual says the shaft runs on two permanently lubricated bearings, so there is no routine oiling.
    • hawos states a 10-year warranty for private use. At €210 in Germany it is one of the lowest-priced wood-and-stone mills we looked at.
Trade-offs What to weigh before you buy 4 points
    • It is slow and small. At 25 g a minute, 500 g of fine flour takes about 20 minutes of cranking, and the 200 g hopper needs refilling.
    • hawos does not name the material of the funnel, the plate under the stone that guides the flour, the clamps or the bearing lubricant. The photo on the manual’s cover shows a wooden funnel.
    • The stones are described two ways. hawos says a corundum/ceramic stone; the US seller says a Naxos basalt cone with a corundum-ceramic disc. Neither names the bond.
    • The 10-year warranty is written for units meant for German delivery, and the US seller’s own policy page gives 2 years.
What to know Details worth knowing first

A hand mill trades speed for simplicity. The Molere is beech wood, a corundum/ceramic stone, a crank and a glass catch bowl, and hawos describes nothing else. That makes it one of the few mills whose maker describes a build with no plastic in it. For the wider case for keeping plastic away from food, see reducing your microplastic exposure.

Set your expectations on speed. About 25 g of fine flour a minute means roughly 20 minutes for 500 g, from a hopper that holds 200 g. A household that bakes a loaf or two a week, or mixes some fresh flour into other flour, will not mind. Someone baking every day will.

Some details are still open: the funnel and the flour-guide plate are not described, the stone is described two ways, and the warranty is written for German buyers. We are asking hawos for a full materials list, a clear description of the stone and a warranty letter that covers US buyers.

Whole berries such as Grand Teton’s organic einkorn berries are what a mill like this turns into flour. For what whole-grain flour does in baking, see spelt, fiber and blood sugar and sourdough.
