Flourless Almond Butter Cookies
Chewy, four-ingredient cookies with no flour and no refined sugar — ready in 20 minutes.
Almond butter gives these cookies protein, vitamin E, and healthy fat, with maple syrup instead of refined sugar.
Ingredients
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- Stir the almond butter, maple syrup, egg, and baking soda into a smooth, thick batter.
- Fold in the chocolate chips if using.
- Scoop tablespoon portions onto the sheet and flatten slightly with a fork.
- Bake 10–12 minutes until the edges are set. They will be soft — let them cool on the pan 10 minutes to firm up.
Tips
- Use a natural almond butter that is drippy at room temperature for the best texture.
- They firm up a lot as they cool, so resist moving them while hot.
