  1. Preheat oven to 350°F (175°C).
  2. Core the apples, leaving the bottoms intact to hold the filling, and set them in a baking dish.
  3. Mix the oats, walnuts, maple syrup, melted butter, cinnamon, and nutmeg.
  4. Pack the filling into the apple cavities and over the tops.
  5. Pour 1/2 cup water into the bottom of the dish, cover with foil, and bake 30 minutes.
  6. Uncover and bake 10 more minutes until the apples are tender and the topping is golden. Serve warm.
