Berries bring fiber and anthocyanin pigments, and the oat-almond topping adds more fiber, some protein and vitamin E. Each serving holds a little over two teaspoons of maple syrup, far less than a typical crumble.

Ingredients

Instructions

  1. Preheat the oven to 375°F (190°C) and set out an 8-inch square baking dish.
  2. Zest the lemon into a large bowl, then add the berries, 2 tbsp of lemon juice, 2 tbsp of the maple syrup, and the arrowroot, and toss gently.
  3. Tip the berries into the baking dish and spread them in an even layer.
  4. Stir the oats, almond flour, sliced almonds, cinnamon, and salt together in a second bowl.
  5. Stir in the melted butter, the remaining 3 tbsp maple syrup, and the vanilla until the mixture clumps when squeezed in your hand.
  6. Scatter the topping over the berries in loose clumps, leaving a few gaps so steam can escape.
  7. Set the dish on a baking sheet to catch drips and bake 35 to 40 minutes (45 if the berries were frozen), until the topping is golden and the juices bubble at the edges.
  8. Cool 15 minutes before serving so the juices thicken.

Tips

  • Add frozen berries straight from the freezer. Thawing first releases water and makes the filling soupy.
  • You can assemble it a day ahead, cover, and refrigerate, then bake from cold, adding a few minutes. The topping is crispest the day it is baked; reheat leftovers in a 350°F (175°C) oven for 10 to 15 minutes.
  • Peaches, plums, or sliced apples with a pinch of ginger all work in place of the berries. For a dairy-free crumble use coconut oil, and for a gluten-free one use certified gluten-free oats.
  • Serve with plain Greek yogurt, which adds a tangy contrast and some protein.
